You’ll Need:

🔹2-3 small potatoes, thinly sliced

🔹5-6 cherry tomatoes, halved

🔹 1clove garlic, minced

🔹 2 tbsp extra virgin olive oil

🔹 Edamame 

🔹 2 large handfuls Arugula

🔹 2-3 hard boiled pasture-raised eggs, halved or sliced

🔹 Italian seasoning, salt & pepper

Optional Toppings

🔸crumbled feta

🔸 avocado

🔸 green onion, chopped

🔸 sea salt

🔸 red chili flakes

🔸 evoo (for drizzling)

How to:

1. In a bowl, prepare your potatoes. Season with sea salt, pepper, Italian seasoning & garlic. Air fry or bake in the oven. While those cook start prepping your other ingredients.

2. Build your bowl with arugula, hard boiled eggs, edamame, potatoes, tomatoes, avocado and additional toppings of your choice. Drizzle olive oil over the top and enjoy!!!
