Greek Style Meatball bowl

Greek style Chicken Meatball bowl tossed with iceberg lettuce, cucumbers topped with yogurt. Delicious, simple & Nutritious.

This easy Greek bowl recipe is loaded with fresh ingredients and an explosion of exciting flavors, leaving you wanting for more.

Ingredients

1 package ground chicken

1 tsp dried oregano

1 tsp dried cumin

1/2 tsp dried parsley

1/2 tsp onion powder

1/2 tsp garlic powder

1/4 tsp dried thyme

salt + pepper

1/4 cup almond flour

1 garlic clove (minced)

1 egg

1 package chickpea & green pea rice alternative (your choice of grain)

iceberg lettuce

cherry tomato

cucumbers

plain greek yogurt (dairy-free)

olive oil


Directions:

Cook your choice of grain to package instructions. While that cooks, begin making the meatballs by adding all spices, almond flour and egg to your chicken. Mix and roll into balls, using water on your hands is helpful so it doesn't get too sticky. Drizzle olive oil on your pan & fry over medium-high heat until browned and cooked through. Next, make your bowl (base: lettuce top: chickpea & lentil ricce, tomato, cucumber and add meatballs on top.

For the sauce: You’ll need plain greek yogurt, warm water, salt, pepper, dill (or parsley) garlic powder, and red pepper flakes. Mix it all up in a bowl and drizzle to your liking.
